I have an eye opening 20 minute animated video clip to share with you today, but first, a couple of points of clarification on coconut.
A number of folks have asked why our coconut oil went from solid white earlier this year to a clear liquid over the past months.
The answer is quite simple. The melting point for coconut is 76 degrees Fahrenheit. At or above 76 F, coconut oil turns clear. Below 76 F, it takes on a creamy white consistency.
What makes coconut oil a super healthy choice for cooking is that bulk of fatty acids that make up coconut oil are extremely stable when exposed to heat or light - this is quite the contrast when compared to most vegetable oils that quickly turn rancid when heated or stored under sub-optimal conditions.
